Logística Calamocha was seeking to become a modern

Since 2004, we have a system of Hazard Analysis and
Critical Control Points (HACCP) in order to prevent
or minimize contamination risks associated with our
activities.

Since 2006, we have a comprehensive
measure of assurance and traceability, through which
we can determine the origin, home town, checks,
CE of the factory, batch, packaging date and expiration
date. |
This is a security system that ensures quality
in each batch. It is based on the Information
System developed by OBT ® (Open Business Technologies).
The operation is as follows:
- Raw materials arrive at reception. Then, we
carry out the inspection at reception (temperature,
quality, hygiene, etc.), and check against the
invoice of the goods to the order (computer) by
Comercial Logística Calamocha.

Once given the Ok (satisfactory inspection),
we enter all the data available in the system (trade
name, units, weight, supplier, sanitary registration
number, order number, date of arrival, departure to
which they belong, records receipt inspection, etc.).
This information is stored on the server.
The
system issues a label, with a unique barcode containing
all the above information. A bar code is a set of numbers
(data), whose purpose is the unequivocal identification
of a product. The system allows its individualization,
whatever their origin and final destination, facilitating
the free movement of goods. The bar code can be read
by many data collection equipment such as scanners,
pencils, readers, etc. The program uses the EAN (European
Article Numbering). It is an international standard
created in Europe in 1977. Currently it operates in
over 80 countries and is compatible with the Universal
Product Code (UPC) used in North America. The sales
units (shoulders or hams) have a unique product code
that can be read and identified in all countries through
appropriate reading equipment. EAN13 is used internally,
which adheres to the product and accompanied to its
processing.
Besides the bar code, the label has the trade name and
weight.
If these raw materials (products) are going to be commercialized
as such, the label, in case of any occurrence, will
enable us to know the origin, and all data for that
item. If these raw materials are going to be subjected
to some kind of processing, we will read the bar code
label, and we will assign it to a specific production
order (with a batch of production).
The finished products will have another label with a
distinct and unequivocal bar code. In addition to the
raw data, they will take additional information, such
as the processing day, shift, process, etc.
Orders
made by customers are collected and entered into the
software, each of which generates a production order.
Following, they are prepared in different departments,
as appropriate, and taken to the chamber of finished
products. From there they will be brought to the dock,
where they final delivery note is produced by picking
and reading the labels with scanners. The data become
part of the delivery note.
Not all data related to a batch are included in the
delivery note (for simplicity), only those needed to
make business transactions properly. Similarly, the
label in case of occurrence, will enable us to know
its origin and details of processing, recovering from
a simple reading, all data of that item. In this way,
we can correlate a particular batch of finished products
with raw materials that compose it. We work with the
best suppliers in national and international markets.
All of our dryers have, without exception, the highest
quality systems.
Currently, our Research and Development Department is
about to conclude the creation of an informative web
page, which will improve our current traceability system,
where any customer can find information, from the identification
code on the label of each final product. The information
that will appear is the following:
- Origin
- Food quality / racial- Analysis and checks
- Number of the factory where is produced.
- Date of killing / curing
- Batch
- Date of Packaging
- Expiration date
- Order Status
